Raw Cashew Brownie Bite Bars 
 
Brownie Bites 
20 dates 
½ cup almonds
½ cup cacao nibs (or cacao powder)
 
Cashew Layer 
250g raw cashew 
1tbsp coconut oil 
1tbso agave syrup/ honey 
 
Almond butter layer 
Recipe here ( for Raw, use raw almond nuts instead of dry roasted almonds)
 
Prepare a container (e.g. pound cake tin) by placing a large piece of plastic film onto the inner side of the container, make sure the inner sides of he container will still be covered with the plastic film when layering the ingredients (this will make it easier to remove the finished product out from the container), Set aside for later use.
For brownie bites: Place base cacao nibs into blender, blend into fine powder (skip this step if using cacao powder). Place almond into blender with blended cacao nibs/ cacao powder; blend until almonds become small and crumbly. Then place dates into blender, blend until mixture sticks together and dates are well processed.
Remove brownie mixture from blender. Roll brownie mixture into small bite size balls. Repeat for ½ of the mixture (because you will be using only ½ of the brownie mixture in this recipe). Set a side
Rinse and dry blender.
For the cashew layer: Then place the cashew layer ingredients into blender, blend until dough is formed. Remove from blender and set aside.
Press a thin layer of the cashew mixture on the bottom of the prepared tin. Then place a few brownie bites onto the layer, gently press down the brownie balls. Again, place some cashew mixture, then brownie bites. Repeat layering until all the cashew ingredients as used up.
Place mixture into freezer. Meanwhile make almond butter
For almond butter: Place almond butter ingredients into blender/ food processor, blend until smooth. Stop blender/food processor and scrap down sides if necessary.
Spread almond butter on cashew brownie bite mixture. Place whole mixture into freezer; freeze for at least 2 hours.
Remove mixture from freezer for 15-20 minutes; allow it to soften before cutting bars.  (To store: cover and place into freezer, store up to 1 week)
