Lemon Poppy Seed Cake
34g GF all purpose flour
25g rice flour
½ tsp baking powder
¼ tsp baking soda
2 tsp poppy seed
a small pinch of turmeric (optional, for yellow color)
1- 1 ½ tsp lemon zest (zest of 1 lemon)
2 tbsp stevia
90g sweet potato, cooked
2 tbsp lemon juice
2tbsp almond milk
Preheat over to 180
In one bowl whisk together first 6 ingredients (AP flour to turmeric). In another bowl, mix together lemon zest and stevia, mix well and add into dry mixture. Set aside
In a mixing bowl, mash sweet potato with lemon juice and almond milk, mix to form a thick paste. Add dry ingredients, mix until well incorporated.
Spread batter into a baking pan, place into preheated oven, bake for 20 minutes.
